His parents christened him Nobuyuki Ura but to sushi e aficionados, he’s simply the all-seeing Ura-san. Wielding his knife with extraordinary dexterity from behind the white marble sushi bar, the keen surfer loves his front-row view of satisfied diners. That, he says, is his definition of instant gratification.
