Atsushi Saito
Atsushi was already training as an apprentice sushi chef while still in high school. He spent several more years in Japan honing his craft before moving to Sydney in 1995.
Atsushi joined Merivale’s sushi e as second chef in 2000, and his fresh creations at Sushi Choo have been keeping diners away from their desks since 2007. His aim is to provide the freshest, fastest, most interesting and stylish sushi train in Sydney. All-you-can-eat for a great deal, ala-carte for the flamboyant and in the know.
