Poached Spencer Gulf prawns, iceberg lettuce, tomato chilli jam, and tomato jelly
Our interpretation of a prawn cocktail using the best prawns in Australia, traditional iceberg lettuce, but instead of a cocktail sauce, we use a tomato chilli jam and tomato jelly to “cool” the heat of the chilli jam.
Our signature beef tartare, shoestring fries
A classic presentation of steak tartare. Fillet of beef, hand-chopped to order with the usual flavourings and presented with a raw egg yolk on top and shoestring fries on the side.
