Establishment (Sept 2000)

Establishment was created from the burnt out ruins of the former George Patterson House on George Street. The new building retains many of the original grand 19th century features including statuesque columns in the bar and high timber beams in the ceilings of the bars & hotel bedrooms.

This world-class emporium is the grand dame of Sydney’s entertainment scene – boasting layer upon layer of restaurants and bars tucked behind its classical façade, plus a stunning boutique hotel that features 31 deluxe rooms including two penthouse suites.

Hemmesphere, the far East-inspired cocktail bar on the fourth floor that feels like a private club, is known for its extensive drinks menu, world class cocktails and supper menu.

If you prefer a cosy & intimate wine bar, Tankstream Bar, located next to the hotel reception is perfect for quiet conversation and a relaxed drink.

Hidden behind the famous cocktail lounge Hemmesphere, on Establishment’s fourth floor, is an enclave of modern Japanese expression: sushi e. Watch chefs in the centre of a marble bar, serenely and precisely slicing fresh fish into spectacular creations, making sushi e one of Sydney’s most highly praised sushi restaurants.
